The history of Kolkata Biryani dates back to the 19th century. In 1856, the British snatched his kingdom from the last Nawab of Odh, Wajid Ali Shah, and annexed it to the British colony.
Nawab Sahib was convinced that his kingdom would be regained, so he sent his family to petition the British Queen, but after the failure of the War of Independence in 1857, Nawab Sahib was captured by the whites and taken to Fort William. Imprisoned for 26 months.
On his release from prison, Nawab was allowed to choose any part of India for his residence, on which Wajid Ali Shah chose a place near Kolkata and built his new house in the style of his old palace. Separate roofs, zoos, gardens, etc., and a large royal kitchen were built for pigeon-flying and kite-flying
The royal kitchen was built but there was no royal cost to run it, so gradually when the Nawab ran out of money, the royal cook started cooking eggs and potato curry instead of meat to save money. And from here the Kolkata Biryani with eggs and potatoes was born.
Manzilat Fatima, the great-granddaughter of Nawab Wajid Ali, told a newspaper in an interview that the only difference between the Kolkata Biryani and the Mughal royal biryani was the potato.
When Nawab Sahib came to Kolkata, he did not have that much money. A few years after coming to Kolkata, potatoes were introduced in biryani to increase the amount of food and then these potatoes became popular.
Nawab Sahib's cooked potato biryani was so popular in taste that it became a favorite dish of biryani enthusiasts all over the subcontinent from Kolkata to Karachi. Kolkata became known as Biryani.
